Pakistani Chickpea Dip 2

Pakistani Chickpea Dip 2 is a beloved staple across the bustling cities of Karachi, Lahore, Peshawar, and Islamabad. Here, the art of seasoning is an instinctual craft, with salt measured by feel and a generous hand for fat. This version captures the essence of the Pakistani family kitchen, where the dip is lovingly prepared for gatherings large and small, emphasizing the communal joy of sharing food with loved ones.

The dip is smooth yet textured, with the earthy richness of chickpeas harmonizing with the nutty undertone of tahini and the bright zing of freshly squeezed lemon. Garlic adds a gentle pungency, while cumin lends its warm, aromatic depth. Each bite is a balanced interplay of flavors, creating a dish that is both comforting and satisfying.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by draining and rinsing 400 g of chickpeas thoroughly under cold water. Transfer them to a food processor or a large mortar and pestle. Blend or pound the chickpeas until they reach a coarse, grainy texture, which will provide the base for your dip.
  2. Add 2 tbsp of tahini to the chickpea mixture. Slowly incorporate the juice of one lemon, blending continuously. The mixture should start to become smoother and creamier, with the lemon juice helping to balance the richness of the tahini.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the mixture along with 1 tsp of cumin. Blend again until the garlic and cumin are evenly distributed, enhancing the flavor profile of the dip.
  4. Gradually add fine sea salt to taste, blending in small increments. Taste the dip on a piece of bread to ensure the seasoning is balanced. The garlic should be present but not overpowering, and the salt should enhance the natural flavors without being too prominent.
  5. Allow the dip to rest for a few minutes at room temperature. This brief rest helps the flavors meld together, resulting in a more harmonious taste. Serve the dip cool, setting it out with bread or vegetables for sharing, as is traditional on Pakistani tables.
