Pakistani Chickpea Dip 3 is a staple across the bustling cities of Karachi, Lahore, Peshawar, and Islamabad, where it graces tables with its simple, yet profound, flavors. This version, rooted in the Pakistani home kitchen, is prepared with a touch of intuition—salt is added by feel, and rich, generous use of fat is encouraged, crafting a dip that invites sharing and conversation.

The dip should be creamy and smooth, with the chickpeas providing a nutty base enriched by the earthy tahini and the vibrant zing of fresh lemon juice. Cumin adds a warm depth, while garlic offers a pungent kick. This dish is perfect for spreading on warm flatbreads or as a companion to fresh vegetables, making it a versatile delight for any occasion.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by draining and rinsing 400 g of chickpeas thoroughly to remove any excess brine. Place the chickpeas into a food processor or a large mortar and pestle. Blend or pound the chickpeas until they form a coarse paste, ensuring there are no whole chickpeas left. The texture should be slightly chunky but cohesive.
  2. Add 2 tbsp of tahini to the chickpea paste. Slowly incorporate the juice of one lemon, blending or stirring continuously to ensure the mixture emulsifies smoothly. The consistency should become creamy and slightly lighter in color as the tahini and lemon juice blend with the chickpeas.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the mixture along with 1 tsp of cumin. Blend or stir until the garlic and cumin are evenly distributed, enhancing the aroma and flavor of the dip.
  4. Gradually season the dip with fine sea salt to taste. Begin with a small pinch, blend, and taste by spreading a small amount on a piece of bread. Adjust the salt incrementally until the flavors are balanced and to your liking.
  5. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period helps the flavors meld together, enhancing the overall taste. Serve the dip cool, garnished with a drizzle of olive oil if desired, and enjoy it with fresh bread or as part of a larger meal.
