Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic
  • to finisholive oil
  • to tastefine sea salt

Method

  1. Begin by preparing the herbs. Choose a mix of fresh cilantro, mint, and parsley, roughly chopping them to make about 1 cup packed. Place the chopped herbs into a blender or food processor.
  2. Add 400 g of yogurt to the blender with the herbs. Peel and roughly chop 2 cloves of garlic, then add them to the mixture. Blend the ingredients until you achieve a smooth, vibrant green paste. The texture should be creamy with no large herb pieces visible.
  3. With the blender running on a low setting, slowly drizzle in about 2 tablespoons of olive oil. This will help emulsify the dip, giving it a rich and smooth consistency. The mixture should appear glossy and thick.
  4. Add a pinch of fine sea salt to the mixture. Blend briefly, then taste the dip by spreading a small amount on a piece of bread. Adjust the salt to your preference, ensuring the flavors are balanced and the garlic provides a gentle warmth without overpowering the herbs.
  5. Transfer the dip to a serving bowl and let it rest in the refrigerator for at least 15 minutes. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, drizzled with a little more olive oil on top for a finishing touch.
