Ingredients

  • herbs — chopped

Method

  1. Begin by preparing the herbs. Choose a mix of fresh herbs such as cilantro, mint, and parsley. Rinse them thoroughly under cold water to remove any dirt, then pat them dry with a clean kitchen towel. Roughly chop the herbs and set aside.
  2. In a blender or food processor, add the 400 g of yogurt along with the chopped herbs. Peel and add 2 cloves of garlic. Blend the mixture until it reaches a smooth and creamy consistency, with the herbs finely incorporated into the yogurt.
  3. With the blender running on a low setting, slowly drizzle in a small amount of olive oil. This should be done gradually to allow the oil to emulsify with the yogurt, creating a rich and silky texture. Continue until you've added about 2 tablespoons of olive oil.
  4. Taste the dip and begin seasoning with fine sea salt. Start with a small pinch and blend briefly, then taste again. The salt should enhance the flavors without overpowering the fresh taste of the herbs. Adjust as needed, tasting on a piece of bread to get a sense of how the dip will be served.
  5. Once seasoned to your liking, transfer the dip to a serving bowl. Allow it to rest in the refrigerator for about 15 minutes. This brief resting period helps the flavors meld together, resulting in a more cohesive taste.
  6. Before serving, give the dip a gentle stir and finish with a drizzle of olive oil on top. Serve cool, accompanied by fresh bread or as part of a larger spread. The dip should have a vibrant green color with a smooth, creamy texture.
