The dip is a creamy blend of chickpeas and tahini, brightened with a squeeze of lemon and the aromatic presence of cumin. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic

Method

  1. Begin by placing 400 g of cooked chickpeas into a food processor. If you prefer a more traditional approach, use a mortar and pestle. Blend or pound the chickpeas until they form a coarse paste, ensuring there are no whole chickpeas left. The texture should be smooth but still have a bit of graininess, which is characteristic of this dip.
  2. Add 2 tablespoons of tahini to the chickpea paste. Slowly incorporate the juice of one lemon, allowing the mixture to absorb the liquid fully before adding more. This gradual addition helps maintain a creamy consistency without making the dip too runny.
  3. Peel and mince 2 cloves of garlic finely, then add them to the mixture along with 1 teaspoon of cumin. Blend or mix well until the spices and garlic are evenly distributed. This step ensures that the garlic flavor infuses throughout the dip, providing a warm, aromatic undertone.
  4. Season the dip with fine sea salt to taste. Start with a small pinch, mix thoroughly, and taste by spreading a small amount on a piece of bread. Adjust the salt gradually until the flavors are balanced and to your liking.
  5. Allow the dip to rest for about 10 minutes at room temperature. This resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, garnished with a drizzle of olive oil if desired, and enjoy it with fresh bread or vegetables for dipping.
