Persian Chickpea Dip

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water. This helps remove any excess salt from the canning liquid and ensures a smoother texture in your dip. Transfer the chickpeas to a food processor or a large mortar and pestle, depending on your preference for blending or pounding.
  2. Add 2 tbsp of tahini to the chickpeas in the food processor or mortar. Begin blending or pounding the mixture until it reaches a coarse paste. The texture should be mostly smooth but with a slight graininess, which adds a pleasant mouthfeel to the dip.
  3. Squeeze the juice of one lemon into the chickpea mixture, ensuring no seeds fall in. Gradually incorporate the lemon juice by blending or stirring it in slowly. This step balances the richness of the tahini with a bright acidity, enhancing the overall flavor.
  4. Peel and finely mince 2 cloves of garlic. Add them to the mixture along with 1 tsp of cumin. Blend or pound the mixture again until the garlic and cumin are fully integrated, providing a fragrant aroma and a warm, earthy undertone to the dip.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and then taste the dip on a piece of bread. Adjust the salt incrementally, as this dish relies on a subtle balance of flavors, and the salt should enhance without overpowering.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together, resulting in a more cohesive taste. Serve the dip cool, accompanied by fresh bread or vegetables for dipping, inviting everyone to share in this traditional Persian delight.
