Persian Herb Dip 3

Serves 4 to 6 Dip vegetarian, Appetizers

Persian Herb Dip 3

This Persian Herb Dip finds its roots in the everyday rhythm of Persian home kitchens, where it is crafted without the constraints of exact measures and instead shaped by instinct and taste. A staple on family tables, this version captures the heart of a Persian cook's approach, where herbs are plucked fresh, garlic is judged by smell, and the table invites everyone to dive in with bread or fresh vegetables.

Expect the dip to be a harmonious blend of creamy yogurt and fragrant herbs, with garlic providing a robust undertone. The generous drizzle of olive oil adds a luxurious finish, while the salt is balanced to perfection by the cook’s discerning hand. This dip is designed for sharing, making it a centerpiece of communal dining.

Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic
  • to finisholive oil
  • to tastefine sea salt

Method

  1. Begin by preparing the herbs. Choose a mix of fresh herbs such as parsley, cilantro, dill, and mint. Wash them thoroughly under cold water to remove any dirt or grit, then pat them dry with a clean kitchen towel. Chop the herbs finely and set aside.
  2. In a mixing bowl, combine 400 g of yogurt with the chopped herbs. Use a spoon or a whisk to mix them together until the herbs are evenly distributed throughout the yogurt. The mixture should have a smooth and creamy texture with visible flecks of green herbs.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the yogurt and herb mixture. Stir well to ensure the garlic is evenly incorporated, which will infuse the dip with a subtle, aromatic flavor.
  4. Slowly drizzle olive oil into the mixture while stirring continuously. Aim for a smooth and slightly glossy consistency. The oil will add richness and help bind the flavors together.
  5. Season the dip with fine sea salt to taste. Start with a small amount, mix well, and taste by spreading a small portion on a piece of bread. Adjust the salt as needed to enhance the flavors without overpowering them.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, resulting in a more harmonious taste.
  7. Serve the Persian Herb Dip cool. Drizzle a little more olive oil on top for a finishing touch, and present it with fresh bread or vegetables for dipping.
