Ingredients

Method

  1. Begin by preparing the roasted peppers. If using whole roasted peppers, remove the skins, seeds, and stems. Place the cleaned peppers into a mortar and pestle or a food processor. Pound or blend them until you achieve a smooth and slightly chunky texture, which is essential for the dip's rustic feel.
  2. Peel and finely chop 2 cloves of garlic. Add them to the pepper mixture. The garlic should be well-distributed but not overpowering, providing a subtle heat and depth to the dip.
  3. Slowly drizzle 60 ml of olive oil into the pepper mixture while continuously blending or stirring. This gradual incorporation ensures the oil emulsifies with the peppers, creating a creamy and cohesive dip.
  4. Squeeze the juice from one lemon and add it to the mixture. Stir well to combine. The lemon juice will brighten the flavors and add a refreshing acidity that balances the richness of the olive oil.
