Tentsuyu

Serves 4 to 6 vegan, tempura

Tentsuyu

Tentsuyu is the quintessential dipping sauce that accompanies tempura, a beloved Japanese dish. Originating from the Edo period, this sauce has been refined over generations to complement the crispy, airy texture of tempura. In Japanese households, making tentsuyu is an art passed down through family recipes, with each cook adjusting the salt and fat to their liking, ensuring a perfect harmony for a shared meal.

The taste of tentsuyu is a delicate balance of savory and sweet, with the umami-rich dashi providing depth, while soy sauce and mirin add complexity. Grated daikon adds a refreshing, mild bite, cutting through the richness of the tempura. This sauce is an essential partner to tempura, enhancing its flavors without overpowering the dish.

Ingredients

  • 60 mldashi
  • 2 tbspsoy sauce
  • 2 tbspmirin
  • grated daikon — to serve
  • to tastefine sea salt

Method

  1. In a small saucepan, combine 60 ml of dashi, 2 tablespoons of soy sauce, and 2 tablespoons of mirin. Place the saucepan over medium heat and gently stir the mixture to combine the ingredients thoroughly. Heat until the mixture begins to emit a gentle aroma and the surface shimmers slightly, indicating the flavors are melding.
  2. Remove the saucepan from the heat and allow the mixture to cool slightly. This pause helps the flavors integrate more deeply and allows the sauce to reach a comfortable serving temperature.
  3. Once the sauce has cooled, transfer it to a small bowl. Gradually incorporate grated daikon into the sauce, stirring gently to blend. The daikon should be added to taste, providing a refreshing contrast to the savory base.
  4. Taste the sauce and adjust the seasoning with fine sea salt. Add a small pinch at a time, stirring and tasting after each addition, until the balance of flavors is to your liking.
  5. Allow the Tentsuyu to rest briefly at room temperature. This resting period ensures that the flavors have settled and are well-balanced before serving.
  6. Serve the Tentsuyu cool alongside tempura or other dishes, allowing diners to enjoy the harmonious blend of flavors typical of a Japanese home-cooked meal.
