Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water to remove any excess brine. Transfer the chickpeas to a large mixing bowl or a food processor. If using a mortar and pestle, pound the chickpeas until they break down into a coarse paste. If using a food processor, pulse until you achieve a similar coarse texture, ensuring not to over-process them into a smooth paste just yet.
  2. Add 2 tbsp of tahini to the chickpeas. Begin blending or pounding again, gradually working the tahini into the chickpeas until the mixture starts to come together and becomes creamier. The tahini will help bind the chickpeas and add a nutty flavor, essential for the dip's richness.
  3. Squeeze the juice of one lemon into the mixture, ensuring no seeds fall in. Blend or pound again to incorporate the lemon juice thoroughly. The acid from the lemon will brighten the flavors and balance the richness of the tahini, creating a harmonious base for the dip.
  4. Peel and finely chop 2 cloves of garlic, then add them to the mixture along with 1 tsp of cumin. Blend or pound until the garlic is well distributed and the cumin is evenly mixed in. The garlic should infuse the dip with a subtle sharpness, while the cumin adds a warm, earthy undertone.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and taste by spreading a small amount on a piece of bread. Adjust the salt gradually, tasting after each addition, until the flavors are balanced and to your liking.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, with fresh bread or vegetables for dipping, inviting everyone to share in this Vietnamese home-cooked delight.
