Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin

Method

  1. Begin by placing 400 g of chickpeas in a blender or food processor. If using canned chickpeas, drain and rinse them thoroughly to remove any excess salt or preservatives. Blend the chickpeas until they form a coarse paste, stopping occasionally to scrape down the sides of the bowl to ensure even blending.
  2. Add 2 tbsp of tahini to the chickpea paste. Squeeze in the juice of one lemon, making sure to catch any seeds. Blend again, this time aiming for a smoother consistency. The mixture should start to look creamy but still have a bit of texture from the chickpeas.
  3. Slowly drizzle in 2 tablespoons of olive oil while the blender is running. This will help emulsify the mixture, giving it a rich and smooth texture. The dip should appear glossy and hold together well.
  4. Peel and finely chop 2 cloves of garlic. Add them to the mixture along with 1 tsp of cumin. Blend until the garlic is fully incorporated and the cumin is evenly distributed, lending a warm, earthy aroma to the dip.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and then taste the dip on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will meld and intensify as the dip rests.
  6. Transfer the dip to a serving bowl and let it rest for about 10 minutes. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, accompanied by fresh bread or vegetables for dipping.
