The dip offers a creamy texture, with chickpeas providing a hearty base, enhanced by the nutty richness of tahini and the bright tang of lemon juice. Cumin adds a warm, earthy aroma, while garlic delivers a punch of flavor. Salt is adjusted to personal taste, bringing all elements into harmonious balance. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse 400 g of chickpeas thoroughly under cold water to remove any excess starch and preservatives. This will ensure a smoother texture in your dip. Transfer the chickpeas to a large mixing bowl or a food processor.
  2. Add 2 tbsp of tahini to the chickpeas. Squeeze the juice from one lemon over the mixture, ensuring no seeds fall in. The lemon juice adds a bright acidity that balances the richness of the tahini.
  3. Peel and roughly chop 2 cloves of garlic, then add them to the bowl or processor. Sprinkle 1 tsp of cumin over the ingredients. The cumin provides a warm, earthy flavor that complements the chickpeas.
  4. Begin to blend or pound the mixture. If using a food processor, pulse until the mixture starts to come together. If pounding, use a pestle to mash the ingredients until they form a coarse paste.
  5. Slowly drizzle in a generous amount of olive oil while blending or pounding. Continue until the mixture reaches a creamy consistency. The oil helps emulsify the dip, giving it a smooth texture.
  6. Taste the dip and add fine sea salt to your preference. Blend or pound again briefly to incorporate the salt evenly. Test the flavor by spreading a small amount on a piece of bread; adjust seasoning if necessary.
  7. Allow the dip to rest for a few minutes to let the flavors meld together. This brief resting period enhances the taste and texture of the dip.
  8. Serve the West African Chickpea Dip cool, ideally with fresh bread or vegetables for dipping. This dish is meant to be shared, embodying the communal spirit of West African dining.
