Ingredients

  • 400 gdried beans — soaked
  • 1onion
  • 2 tbsptomato paste
  • 80 mloil
  • to tastefine sea salt and black pepper

Method

  1. Start by rinsing 400 g of dried beans under cold water to remove any dust or debris. Place the beans in a large bowl, cover them with water, and let them soak overnight. This will help soften the beans and reduce cooking time, ensuring they cook evenly.
  2. The next day, drain the soaked beans and set them aside. Peel and finely chop 1 onion. In a large heavy-bottomed pot or Dutch oven, heat 80 ml of oil over medium heat. Add the chopped onion to the pot, stirring occasionally, and cook until the onion becomes translucent and soft, about 5 to 7 minutes. This slow cooking releases the onion's sweetness, forming the base flavor of the stew.
  3. Once the onion is soft, add 2 tbsp of tomato paste to the pot. Stir it into the onions, allowing the paste to cook for about 2 minutes. This step deepens the flavor of the tomato paste, giving the stew a richer taste.
  4. Add the drained beans to the pot, stirring to combine them with the onion and tomato paste mixture. Pour in enough water to cover the beans by about an inch. Increase the heat to bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid, leaving it slightly ajar to allow steam to escape, and let the beans cook slowly. Stir occasionally and check the beans for tenderness. They should be soft but not mushy, with a creamy texture inside.
  5. Once the beans have reached the desired tenderness, season the stew with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed. Taste and adjust the seasoning if necessary, keeping in mind that the stew should have a balanced flavor, neither too salty nor bland.
  6. Serve the American Bean Stew hot, garnished with a sprinkle of freshly cracked black pepper if desired. This dish is perfect for sharing, embodying the warmth and comfort of home-cooked meals.
