It's the kind of dish that graces the dinner table on a quiet weeknight or a lazy weekend, when the focus is on good company and satisfying bites. This is not a recipe bound by rigidity but rather one that reflects the casual grace of a family cook's hand.

The dish should taste hearty and robust, with tender beef cubes that have absorbed the savory essence of carrots and onions. The generous use of oil and the subtle hand with salt and pepper bring depth to every mouthful. Serve it hot, allowing the flavors to meld beautifully on the plate, inviting everyone to tuck in and share the warmth.

Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and freshly ground black pepper. Ensure each piece is evenly coated by tossing them gently in a large bowl. This step enhances the flavor of the beef, allowing the salt to penetrate the meat.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides, turning occasionally, until each piece has a deep, rich color. This caramelization adds depth to the dish.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds and chop 1 onion into medium-sized pieces. Once the beef is browned, remove it from the pot and set aside on a plate. Add the chopped onion to the pot, stirring occasionally, until it becomes translucent and slightly golden, which will take about 5 minutes.
  4. Add the carrot slices to the pot with the onions, stirring them together to coat with the oil and beef drippings. Cook for another 3 minutes until the carrots start to soften slightly and the onions are fragrant.
  5. Return the browned beef cubes to the pot, nestling them among the vegetables. Pour in 500 ml of water, ensuring the beef and vegetables are just submerged. Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low, cover the pot, and let it braise for about 1.5 to 2 hours.
  6. Check the beef for tenderness by piercing it with a fork; it should be easy to insert and remove. If the beef is not yet tender, continue to braise, checking every 15 minutes. Adjust the seasoning with more salt and pepper to taste, if needed.
  7. Once the beef is tender and the flavors have melded, remove the pot from the heat. Serve the American Beef Pot 3 hot, accompanied by rice, bread, or a fresh salad, allowing everyone to enjoy the hearty, comforting flavors at the table.
