American Beef Pot is a staple of home-cooked dinners, especially when the chill of autumn starts to bite. It finds its roots in the practicality of American kitchens, where simplicity meets substance. This dish isn't reserved for special occasions but is a comforting fixture on weekday tables, making it a reliable favorite that brings families together after long days.

The dish offers tender beef cubes simmered until they yield to the fork, mingling with the sweet earthiness of carrots and the aromatic base of onions. A generous hand with the oil ensures richness, while salt and pepper are adjusted to personal preference, enhancing the natural flavors. Ingredients

  • 800 gbeef cubes
  • 2carrots

  • 2 tbspoil
  • 500 mlwater

Method

  1. Begin by seasoning the 800 g beef cubes generously with fine sea salt and freshly ground black pepper. Toss the cubes to ensure even coating, allowing the salt to start penetrating the meat, enhancing its flavor.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil shimmers, add the beef cubes in a single layer, ensuring they are not crowded. Brown the beef on all sides until each piece has a deep, rich color, which should take about 3-4 minutes per side. This step develops a flavorful crust and fond on the pot's bottom.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds and chop 1 onion into medium-sized pieces. Once the beef is browned, remove it from the pot and set aside on a plate. Add the chopped onion to the pot, using the moisture to deglaze and lift the fond. Stir occasionally until the onion is translucent and slightly caramelized, about 5 minutes.
  4. Add the carrot slices to the pot and stir them with the onions for about 2 minutes, allowing them to absorb the flavors from the pot. Return the browned beef cubes to the pot, nestling them among the vegetables.
  5. Pour 500 ml of water into the pot, scraping the bottom to release any remaining fond. Bring the liquid to a gentle simmer, then reduce the heat to low. Cover the pot with a tight-fitting lid and let it braise for about 1.5 to 2 hours, or until the beef is tender. The meat should easily break apart with a fork, and the broth should be rich and aromatic.
  6. Once the beef is tender, taste the broth and adjust the seasoning with more salt and pepper if necessary. Serve the American Beef Pot hot, accompanied by rice, bread, or a fresh salad, allowing everyone to enjoy the comforting flavors around the table.
