Ingredients

Method

  1. Start by patting 800 g of chicken pieces dry with paper towels. This helps the chicken brown properly. Season the chicken generously with fine sea salt and black pepper, ensuring each piece is well coated. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium-high heat. Add the chicken pieces in a single layer, skin-side down if applicable, and cook until they are golden brown on all sides. This should take about 5-7 minutes per side, and the chicken should release easily from the pot when it's ready to turn.
  2. While the chicken is browning, peel and finely chop 2 onions. Once the chicken is browned, remove it from the pot and set it aside on a plate. Add the chopped onions to the same pot, using the residual oil and chicken drippings. Cook the onions over medium heat, stirring occasionally, until they become translucent and tender, about 5-7 minutes. This will enhance the flavor base of your curry.
  3. Dice 2 tomatoes and add them to the pot with the onions. Stir in 1 tablespoon of spice paste, ensuring it coats the onions and tomatoes evenly. Cook this mixture until the tomatoes have broken down and the paste is fragrant, about 3-5 minutes. This step builds the curry's depth of flavor.
  4. Return the browned chicken pieces to the pot, nestling them into the onion-tomato mixture. Stir everything together so the chicken is well coated with the sauce.
