Ingredients

  • 800 gchicken pieces
  • 2onions

  • 2 tbspoil
  • 1 tbspspice paste

Method

  1. Start by patting the 800 g chicken pieces dry with paper towels to remove excess moisture, which helps in achieving a good sear. Season the chicken with a generous pinch of fine sea salt and black pepper, then rub 1 tbsp of spice paste evenly over the pieces. Heat 2 tbsp of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the chicken pieces in a single layer, skin-side down if applicable, and brown them for about 4-5 minutes on each side until they develop a deep golden color. Remove the chicken from the pot and set aside.
  2. Peel and finely chop 2 onions. In the same pot, with the remaining oil and chicken drippings, add the chopped onions. Cook over medium heat, stirring occasionally, until the onions become translucent and start to caramelize, which should take about 5-7 minutes. This step builds the base flavor for the curry.
  3. Dice 2 tomatoes and add them to the pot with the onions. Stir well to combine, allowing the tomatoes to break down and meld with the onions, creating a thick, aromatic base. This should take about 5 minutes, during which the tomatoes will soften and release their juices, enhancing the curry's flavor.
  4. Return the browned chicken pieces to the pot, nestling them into the onion-tomato mixture. Stir to coat the chicken thoroughly with the sauce. Cover the pot with a lid and let it simmer gently on low heat for 20-25 minutes, or until the chicken is cooked through and tender. The chicken should be easy to pull apart with a fork, indicating it's done.
  5. If the sauce appears too thin, increase the heat slightly and let it reduce until it reaches your desired consistency. Taste the sauce and adjust the seasoning with additional fine sea salt and black pepper if necessary. The sauce should be rich and flavorful, complementing the chicken perfectly.
  6. Once the sauce has thickened to your liking, remove the pot from heat. Finish by sprinkling freshly chopped herbs of your choice, such as cilantro or parsley, over the top for a burst of freshness.
