Ingredients

  • 1whole chicken

Method

  1. Preheat your oven to 375°F (190°C). Pat the whole chicken dry with paper towels to remove excess moisture, which helps in achieving a crispy skin. Rub the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, ensuring the seasoning covers all sides and even under the skin if possible.
  2. In a large oven-safe skillet or roasting pan, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breast-side down in the pan. Brown the chicken for about 5-7 minutes on each side until the skin is golden brown and crisp. Use tongs to turn the chicken gently to avoid tearing the skin.
  3. While the chicken is browning, wash and cut the 1 kg of potatoes into even-sized chunks, about 1 inch each, to ensure they cook uniformly. Once the chicken is browned, remove it from the pan and set it aside momentarily. Add the potato chunks to the same pan, tossing them in the rendered chicken fat and any remaining oil.
  4. Nestle the browned chicken back into the pan on top of the potatoes. Squeeze the juice from the halved lemon over the chicken and potatoes, then place the lemon halves in the pan for added aroma and flavor. Transfer the pan to the preheated oven.
  5. Roast the chicken and potatoes in the oven for about 45-60 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear when the thickest part of the thigh is pierced. The potatoes should be tender and golden brown.
  6. Once done, remove the pan from the oven and carefully transfer the chicken to a cutting board to rest for about 10 minutes. This allows the juices to redistribute, ensuring moist meat. Meanwhile, check the potatoes; if there's excess liquid in the pan, place it on the stovetop over medium heat to reduce the sauce slightly, enhancing the flavors.
  7. Taste the potatoes and sauce for seasoning, adding more salt and pepper if necessary. Carve the chicken into serving pieces and arrange them on a platter with the roasted potatoes. Garnish with fresh herbs if desired, and serve the dish family-style, inviting everyone to enjoy this hearty, American-style roast chicken meal.
