Ingredients

  • 2 tbspoil
  • 1 tsppaprika
  • lemonhalved
  • to tastefine sea salt and black pepper

Method

  1. Preheat your oven to 375°F (190°C). Begin by patting the whole chicken dry with paper towels to ensure a crisp skin. Rub the chicken generously with fine sea salt, making sure to cover all surfaces. Sprinkle 1 teaspoon of paprika evenly over the chicken, then season with black pepper to taste. Set aside.
  2. In a large oven-safe skillet or roasting pan, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breast-side down into the pan. Brown the chicken for about 5 minutes, or until the skin is golden and crisp. Flip the chicken over to brown the other side for an additional 5 minutes.
  3. While the chicken is browning, wash and cut the 1 kg of potatoes into quarters. Once the chicken is browned on both sides, remove it from the pan and set it aside on a plate. Add the potato quarters to the same pan, tossing them in the remaining oil and chicken drippings to coat them well.
  4. Nestle the halved lemon, cut side down, among the potatoes in the pan. Return the chicken to the pan, placing it on top of the potatoes. Transfer the pan to the preheated oven.
  5. Roast the chicken and potatoes in the oven for about 45 minutes, or until the chicken's juices run clear when pierced between the leg and thigh, and the potatoes are tender when pierced with a fork.
  6. Remove the pan from the oven and carefully transfer the chicken to a cutting board to rest for 10 minutes before carving. If the sauce in the pan seems too thin, place the pan over medium heat and let it simmer until it thickens to your liking. Taste the sauce and adjust the seasoning with more salt if necessary.
  7. Carve the chicken into serving pieces and arrange them on a platter with the roasted potatoes. Squeeze the roasted lemon over the chicken and potatoes for added brightness. Serve the dish family-style, encouraging everyone to help themselves.
