Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your ingredients: finely chop 1 onion and 2 tomatoes. Drain and rinse 400 g chickpeas thoroughly under cold water to remove any excess salt or preservatives from the canning process. Set these aside, ready to add to the pan.
  2. In a large skillet or saucepan, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the chopped onion. Stir occasionally and cook until the onion becomes translucent and soft, which will take on a slightly golden hue, releasing a sweet aroma.
  3. Add 1 tsp cumin to the softened onions. Stir continuously for about a minute to allow the cumin to toast slightly, releasing its earthy fragrance, which will deepen the flavor of the curry.
  4. Add the chopped tomatoes to the pan. Stir to combine with the onions and cumin. Cook until the tomatoes break down and form a thick, saucy base, with no large chunks remaining. This will take a few minutes, and you'll notice the mixture becoming more cohesive and aromatic.
  5. Add the rinsed chickpeas to the pan. Stir well to coat them in the tomato and onion mixture. Allow the chickpeas to cook in the sauce until they are heated through and the flavors meld together, becoming slightly tender to the bite.
  6. Taste the curry and season with fine sea salt and black pepper to your liking. Stir well to ensure the seasoning is evenly distributed. Serve the American Chickpea Curry 2 warm, ready for sharing at the table.
