Ingredients

Method

  1. Start by preparing your ingredients. Peel and cut the 2 eggplants into 1-inch cubes. Dice the 2 tomatoes and finely chop the 1 onion. Mince the 3 cloves of garlic. Season the eggplant cubes generously with fine sea salt and let them sit for 15 minutes to draw out moisture and bitterness.
  2. After 15 minutes, rinse the eggplant cubes under cold water to remove excess salt and pat them dry with a clean kitchen towel. This step ensures the eggplant won't be overly salty and helps them absorb flavors better during cooking.
  3. In a large, heavy-bottomed pot or Dutch oven, heat 80 ml of olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. This slow cooking releases the onion's sweetness, forming a flavorful base for the stew.
  4. Add the minced garlic to the pot and cook for another 1-2 minutes until the garlic is fragrant but not browned. Stir in the eggplant cubes, ensuring they are well-coated with the oil and onion mixture. Cook the eggplant, stirring occasionally, until it begins to soften and turn golden brown.
  5. Add the diced tomatoes to the pot. Stir well to combine all the ingredients. Cover the pot and let the stew simmer gently, stirring occasionally, until the eggplant is tender and the tomatoes have broken down into a thick sauce. The stew should have a rich, cohesive texture with the eggplant fully softened and integrated into the sauce.
  6. Taste the stew and adjust the seasoning with fine sea salt and black pepper to your liking. The flavors should be well-balanced, with a hint of sweetness from the tomatoes and a savory depth from the eggplant and onion. Serve the stew warm, ideally with crusty bread or over rice, for a comforting meal.
