Method

  1. Begin by preparing your ingredients. Peel and dice the 2 eggplants into 1-inch cubes. Dice the 2 tomatoes and finely chop the onion. Mince the 3 cloves of garlic. Season the eggplant cubes with a generous pinch of fine sea salt and let them sit for about 10 minutes to draw out excess moisture.
  2. In a large, heavy-bottomed pot, heat 80 ml of olive oil over medium heat. Once the oil shimmers, add the chopped onion. Cook the onion gently, stirring occasionally, until it becomes translucent and soft, about 5 to 7 minutes. This slow cooking releases the onion's sweetness, forming a flavorful base for the stew.
  3. Add the minced garlic to the pot with the onion. Stir continuously for about 1 minute until the garlic becomes fragrant, being careful not to let it brown. Add the salted eggplant cubes to the pot. Stir to coat them in the oil, onion, and garlic mixture.
  4. Cook the eggplant, stirring occasionally, until it begins to soften and take on a golden hue, about 10 minutes. The eggplant should start to absorb the oil and become tender. If the pot seems dry, add a little more olive oil to prevent sticking.
  5. Add the diced tomatoes to the pot. Stir to combine all the ingredients. The tomatoes will release their juices, creating a sauce that will further soften the eggplant. Continue cooking until the eggplant is fully tender and the tomatoes have broken down into a thick sauce, about 15 minutes. The stew should have a rich, cohesive texture.
  6. Taste the stew and adjust the seasoning with additional fine sea salt and black pepper to your preference. The flavors should be well-balanced, with the sweetness of the onion and garlic complementing the savory eggplant and tomatoes. Serve the stew warm, ideally with crusty bread or over rice, and enjoy the comforting flavors of this American home-cooked dish.
