Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Start by cleaning 700 g of firm white fish under cold running water. Pat the fish dry with paper towels to remove excess moisture, which helps it sear properly. Cut the fish into large chunks, about 2-inch pieces, ensuring they are uniform for even cooking.
  2. Peel and finely chop 1 onion. Dice 2 tomatoes into small pieces. Set these aside as they will form the aromatic base of your curry.
  3. In a large, heavy-bottomed skillet or pot, heat 80 ml of oil over medium heat. Once the oil is shimmering, add the chopped onion. Sauté the onion, stirring occasionally, until it becomes translucent and soft, releasing a sweet aroma, about 5 minutes.
  4. Add the diced tomatoes to the skillet with the onions. Stir in 1 teaspoon of turmeric, allowing the spices to bloom in the hot oil. Cook until the tomatoes break down into a thick, fragrant sauce, stirring occasionally to prevent sticking, about 5-7 minutes.
  5. Season the fish pieces lightly with fine sea salt and black pepper. Gently add them to the skillet, nestling them into the tomato-onion mixture. Cook the fish until it is just opaque and flakes easily with a fork, about 5-8 minutes, depending on the thickness of the pieces.
  6. Taste the curry and adjust the seasoning with more fine sea salt and black pepper if needed. Serve the American Fish Curry 2 immediately, ensuring the fish remains tender and the flavors are vibrant.
