Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Begin by cleaning and drying 700 g of firm white fish. Rinse the fish under cold water to remove any scales or debris, then pat it dry thoroughly with paper towels. This ensures the fish will sear properly and not steam in the pan.
  2. Dice 1 onion and 2 tomatoes into small, even pieces. This will help them cook evenly and blend seamlessly into the curry base.
  3. In a large skillet or heavy-bottomed pot, heat 80 ml of oil over medium-high heat. Once the oil is shimmering, add the diced onion. Cook, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma.
  4. Add 1 tsp of turmeric to the onions, stirring well to coat them evenly. This will give the curry its characteristic golden color and earthy flavor. Cook for another minute until the turmeric is fragrant.
  5. Add the diced tomatoes to the skillet, stirring to combine them with the onion and turmeric mixture. Cook until the tomatoes have softened and melded into the sauce, forming a thick, aromatic base.
  6. Season the fish with fine sea salt and black pepper to taste. Gently place the fish pieces into the skillet, nestling them into the sauce. Reduce the heat to medium and cover the skillet.
  7. Cook the fish until it is just opaque and flakes easily with a fork, about 5 to 7 minutes depending on the thickness of the fillets. The fish should be tender and infused with the curry flavors.
  8. Taste the sauce and adjust the seasoning with more salt if necessary. Serve the American Fish Curry immediately, allowing the flavors to shine while the dish is hot and fresh.
