Ingredients

  • 800 gchicken thighs
  • 2 tbspyogurt
  • 1 tbspoil

Method

  1. Start by patting the 800 g of chicken thighs dry with paper towels. This helps the skin crisp up when cooking. Season both sides generously with fine sea salt and black pepper, then sprinkle 1 tsp of paprika evenly over the thighs for a smoky flavor.
  2. In a large skillet, heat 1 tbsp of oil over medium-high heat. Once the oil shimmers, place the chicken thighs skin-side down in the pan. Cook without moving them for about 5-7 minutes, until the skin is golden brown and releases easily from the pan.
  3. Flip the chicken thighs over and reduce the heat to medium. Continue cooking for another 5-7 minutes. The chicken should be mostly cooked through, with juices running clear when pierced with a knife.
  4. Remove the chicken thighs from the skillet and set them aside on a plate. Add 2 tbsp of yogurt to the pan, stirring to incorporate any browned bits from the bottom. This will create a flavorful sauce base.
  5. Let the yogurt mixture cook for a few minutes, allowing it to reduce slightly. Taste the sauce and adjust the seasoning with additional salt and pepper if needed. The sauce should be slightly thickened and flavorful.
  6. Return the chicken thighs to the skillet, spooning the sauce over them. Allow them to cook together for an additional 2-3 minutes, ensuring the chicken is fully cooked and the flavors meld together.
  7. Finish the dish with a sprinkle of fresh herbs if desired, such as parsley or cilantro, for added freshness. Serve the chicken thighs hot, with the sauce spooned over them, ready to share at the table.
