Method

  1. Start by seasoning the 800 g of lamb cubes with fine sea salt and black pepper to taste. Ensure each piece is evenly coated by tossing them gently in a large bowl. This step enhances the flavor of the meat and helps to create a savory crust when searing.
  2. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil shimmers, add the seasoned lamb cubes in a single layer, making sure not to overcrowd the pot. Brown the lamb on all sides until each piece has a deep, rich color. This should take a few minutes per side, and it helps to develop a robust flavor base for the stew.
  3. Remove the browned lamb cubes from the pot and set them aside on a plate. Lower the heat to medium and add the 2 onions, which should be peeled and sliced thinly. Cook the onions in the remaining oil and lamb drippings, stirring occasionally, until they become soft and translucent, which will take about 5 to 7 minutes.
