Ingredients

Method

  1. Rinse the 300 g of brown lentils under cold water in a fine-mesh sieve to remove any dust or debris. Set them aside to drain. Dice the onion and tomatoes into small, even pieces to ensure they cook evenly. Season the diced tomatoes with a pinch of fine sea salt and black pepper, allowing the flavors to meld while you prepare the rest of the ingredients.
  2. In a large saucepan or Dutch oven, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the diced onion. Stir occasionally, cooking the onion until it becomes translucent and soft, about 5 to 7 minutes. This slow cooking releases the onion's natural sweetness, forming a flavorful base for the dish.
  3. Add 1 tsp of cumin to the softened onions, stirring to coat the onions evenly. Cook for an additional minute until the cumin becomes fragrant, which indicates that the spices have toasted and released their essential oils.
  4. Stir in the drained lentils, ensuring they are well-coated with the onion and cumin mixture. Add enough water to cover the lentils by about an inch. Bring the mixture to a gentle simmer, adjusting the heat as necessary to maintain a steady but gentle bubbling. Cook the lentils until they are tender but still hold their shape, which will take about 20 to 25 minutes. The lentils should be soft to the bite, with a creamy interior.
  5. Once the lentils are cooked, add the seasoned tomatoes to the pot. Stir them in gently, allowing the tomatoes to warm through and release their juices, which will add a fresh brightness to the dish. Continue to cook for another 5 minutes, just until the tomatoes have softened slightly but still retain their shape.
