  1. Begin by cleaning the 600 g shrimp. Rinse them under cold running water and peel off the shells, leaving the tails intact for presentation. Devein the shrimp by making a shallow cut along the back and removing the dark vein. Pat the shrimp dry with paper towels to ensure they sear properly in the pan.
  2. Peel and finely mince 4 cloves of garlic. In a large skillet, pour 80 ml of olive oil and heat it over medium heat. Once the oil is shimmering, add the minced garlic. Stir gently and cook until the garlic becomes fragrant and just begins to turn golden, which will infuse the oil with its aroma.
  3. Add the prepared shrimp to the skillet in a single layer. Increase the heat to medium-high to ensure a quick sear. Cook the shrimp for about 1-2 minutes on each side, or until they turn pink and opaque. Be careful not to overcrowd the pan, as this will steam the shrimp rather than sear them.
  4. Squeeze the juice of one lemon over the shrimp while they are still in the pan. This will add brightness and enhance the flavors. Sprinkle chili to taste for a bit of heat, adjusting based on your preference.
  5. Taste a piece of shrimp and adjust the seasoning with fine sea salt to your liking. The shrimp should be juicy and tender, with a slight kick from the chili and a fresh citrus note from the lemon.
