Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic

Method

  1. Start by ensuring the 600 g of squid rings are clean and thoroughly dried. This will help them sear properly and prevent them from steaming in the pan. If needed, pat them dry with paper towels to remove excess moisture.
  2. Mince 4 cloves of garlic finely. This will allow the garlic to infuse the oil quickly and evenly, creating a fragrant base for the stir-fry.
  3. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add the minced garlic. Stir frequently and cook until the garlic is golden and fragrant, which should take about a minute.
  4. Add the squid rings to the pan in a single layer, if possible. Cook them over medium-high heat, stirring occasionally. The squid is done when it turns opaque and firm, which should happen quickly, in about 2 to 3 minutes. Be careful not to overcook, as this will make the squid tough.
  5. Once the squid is cooked, remove the pan from the heat. Squeeze the juice of one lemon over the squid, and add chili to taste. Stir to combine, ensuring the lemon juice and chili are evenly distributed.
  6. Taste the dish and add fine sea salt to your preference. The salt should enhance the natural flavors without overpowering them.
  7. Serve the squid stir-fry immediately while it's hot, allowing everyone at the table to enjoy the fresh, vibrant flavors.
