Ingredients

  • 6bell peppers
  • 200 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped

Method

  1. Begin by washing 6 bell peppers thoroughly under cold running water. Slice off the tops and remove the seeds and membranes inside, creating a hollow cavity. Set the prepared peppers upright in a baking dish, ensuring they are stable and ready for stuffing.
  2. Rinse 200 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky. Drain the rice well and set it aside.
  3. Peel and finely chop 1 onion. In a large skillet, heat 80 ml of olive oil over medium heat. Add the chopped onion to the skillet, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma, about 5 to 7 minutes.
  4. Add the drained rice to the skillet with the onions. Stir the mixture to coat the rice with the oil and onion juices, allowing the rice to absorb the flavors. Continue cooking until the rice grains turn opaque and slightly toasted, which enhances their flavor.
  5. Season the rice and onion mixture with herbs of your choice, such as thyme or parsley, and add fine sea salt and black pepper to taste. Stir well to combine, ensuring the seasoning is evenly distributed throughout the mixture.
  6. Carefully spoon the rice mixture into the hollowed bell peppers, filling each one generously but not packing too tightly, as the rice will expand during cooking. Pour a small amount of water into the bottom of the baking dish to create steam, which will help cook the peppers evenly.
  7. Cover the baking dish with aluminum foil and place it in a preheated oven at 375°F (190°C). Bake until the peppers are tender and the rice is fully cooked, which you can tell when the peppers are easily pierced with a fork and the rice is soft and fluffy.
  8. Remove the foil and continue baking for an additional 5 to 10 minutes, allowing the tops of the stuffed peppers to lightly brown. This adds a pleasing texture and enhances the overall presentation.
  9. Taste the rice filling for salt and adjust if necessary. Serve the stuffed peppers warm, directly from the baking dish, encouraging guests to enjoy the communal, home-cooked meal.
