Ingredients

  • 800 gbeef cubes

Method

  1. Begin by seasoning 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. Use your hands to ensure the seasoning is evenly distributed over all the pieces. This step is crucial as it enhances the flavor of the beef, which will be the star of your dish.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, being careful not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color. This caramelization adds depth to the flavor of the dish.
  3. While the beef is browning, peel and slice 2 carrots into rounds and chop 1 onion into small pieces. Once the beef is well-browned, remove it from the pot and set it aside on a plate. Add the chopped onion to the same pot, using the residual oil and beef drippings to sauté until the onion becomes translucent and fragrant.
  4. Add the sliced carrots to the pot with the onions, stirring occasionally until the carrots begin to soften slightly. This should take a few minutes, and the vegetables will start to release their natural sweetness, contributing to the overall flavor of the dish.
  5. Return the browned beef cubes to the pot, mixing them with the sautéed onions and carrots. Pour in 500 ml of water, ensuring the beef and vegetables are just covered. Bring the mixture to a gentle simmer, then reduce the heat to low, allowing the dish to braise slowly. Cover the pot with a lid, leaving a small gap for steam to escape.
