Ingredients

Method

  1. Start by patting the 800 g of chicken pieces dry with a paper towel. Season them generously with fine sea salt and black pepper, ensuring each piece is well-coated. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the chicken pieces in a single layer, skin-side down if applicable, and brown them on all sides. Look for a deep golden color and a slightly crispy texture on the outside, which should take about 5-7 minutes per side. Remove the chicken from the pot and set aside.
  2. In the same pot, add 2 chopped onions and cook over medium heat. Stir frequently, scraping up any browned bits from the bottom of the pot, until the onions become translucent and start to caramelize, about 5 minutes. This will add depth to the flavor of your curry.
  3. Add 1 tablespoon of spice paste to the onions, stirring well to coat them. Cook for an additional 2 minutes, allowing the paste to release its aromas and deepen in color. This step is crucial for infusing the dish with rich, spicy flavors.
  4. Dice 2 tomatoes and add them to the pot, stirring to combine with the onions and spice paste. Cook until the tomatoes break down and form a thick sauce, about 5-7 minutes. If the mixture seems too thick, you can add a splash of water to help it along.
  5. Return the browned chicken pieces to the pot, nestling them into the sauce. Reduce the heat to low and cover the pot. Allow the chicken to simmer gently in the sauce until it is cooked through and tender, about 20-25 minutes. The chicken should be easy to pull apart with a fork and the sauce should have a rich, cohesive flavor.
  6. Taste the sauce and adjust the seasoning with more fine sea salt and black pepper if needed. If the sauce is too thin, remove the lid and let it simmer uncovered for a few more minutes to thicken. You want a sauce that clings nicely to the chicken.
