Brasileiro Chicken Roast 2

Ingredients

Method

  1. Pat the chicken dry with paper towels to remove excess moisture, ensuring a crispier skin. Season the entire chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, rubbing the spices into the skin and cavity for even flavor distribution.
  2. In a large, heavy-bottomed roasting pan or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breast-side down in the pan. Brown the chicken on all sides, turning it with tongs, until the skin is golden brown and crisp, about 10-15 minutes. The aroma should be rich and inviting.
  3. While the chicken is browning, peel and cut 1 kg of potatoes into even-sized chunks. Once the chicken is browned, remove it from the pan and set it aside on a plate.
  4. Add the potato chunks to the same pan, stirring them in the rendered chicken fat. Cook the potatoes until they start to turn golden and slightly tender, about 5-7 minutes.
  5. Return the chicken to the pan, placing it on top of the potatoes. Squeeze the juice of the halved lemon over the chicken and potatoes, adding brightness to the dish. Cover the pan with a lid or foil, and transfer it to a preheated oven at 180°C (350°F).
  6. Roast the chicken and potatoes in the oven until the chicken is cooked through and the potatoes are tender. The chicken is done when the juices run clear when pierced at the thickest part of the thigh, and the potatoes should be fork-tender.
  7. If there is excess liquid in the pan, remove the chicken and potatoes, and place the pan on the stovetop over medium heat. Allow the sauce to reduce slightly, stirring occasionally, until it thickens to your desired consistency. Taste and adjust the seasoning with more salt if necessary.
  8. Finish the dish by garnishing with freshly chopped herbs of your choice, such as parsley or cilantro, to add a fresh, vibrant touch. Serve the chicken and potatoes family-style, encouraging everyone to share and enjoy the flavors together.
