Ingredients

  • 700 gchicken thighs
  • 1onion
  • 2peppers
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by patting the 700 g of chicken thighs dry with paper towels to ensure a good sear. Season them generously with fine sea salt and black pepper, making sure each piece is evenly coated. Heat 2 tablespoons of oil in a large skillet over medium-high heat until shimmering. Carefully place the chicken thighs in the skillet, skin-side down if they have skin, and brown them on each side until they develop a deep golden color, about 5-7 minutes per side. This step locks in the juices and adds flavor.
  2. While the chicken is browning, peel and finely chop 1 onion and slice 2 peppers into thin strips. Once the chicken is browned, remove it from the skillet and set it aside on a plate. In the same skillet, add the chopped onion and sliced peppers, stirring them in the remaining oil and chicken drippings. Cook over medium heat until the onions become translucent and the peppers soften, releasing their aroma and sweetness into the dish.
  3. Return the browned chicken thighs to the skillet, nestling them among the softened vegetables. If there is any accumulated juice on the plate, pour it back into the skillet. Cover the skillet with a lid and let the chicken cook through, allowing the flavors to meld together. Check for doneness by cutting into the thickest part of a thigh; the juices should run clear, and the meat should no longer be pink.
  4. If the sauce in the skillet appears too thin, increase the heat slightly and let it simmer uncovered for a few minutes to reduce and concentrate the flavors. Taste the sauce and adjust the seasoning with more fine sea salt and black pepper if needed. This step ensures the sauce is rich and flavorful, complementing the chicken and vegetables.
  5. To finish, sprinkle freshly chopped herbs, such as parsley or cilantro, over the chicken and vegetables before serving. This adds a fresh, vibrant note to the dish. Serve the Brasileiro Chicken Sauté 2 family-style, inviting everyone to share and enjoy the meal together.
