Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your ingredients. Finely chop 1 onion and 2 tomatoes. Drain and rinse 400 g of chickpeas if using canned, or cook them until tender if using dried. Set these aside, along with 1 tsp of cumin, and have fine sea salt and black pepper ready for seasoning.
  2. In a large, heavy-bottomed pot or deep skillet, heat 2 tbsp of oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. This slow cooking releases the sweetness of the onion, which forms the base of the curry.
  3. Add the chopped tomatoes to the pot, along with 1 tsp of cumin. Stir well to combine. Cook until the tomatoes break down and meld with the onions, forming a thick, aromatic base. You'll know it's ready when the mixture starts to release oil around the edges.
  4. Stir in the chickpeas, ensuring they are well coated with the tomato-onion mixture. Cook for another 5-10 minutes, stirring occasionally, until the chickpeas are heated through and the flavors have melded together. The chickpeas should be tender and the sauce should have a rich, cohesive texture.
  5. Taste the curry and season with fine sea salt and black pepper to your liking. Adjust the seasoning gradually, tasting as you go, until the flavors are balanced and to your preference.
