Brasileiro Fish Grill 2 is a classic dish enjoyed at Brazilian home tables, where the cook relies on instinct rather than measurements. Salt is added by feel, and olive oil is used generously to enhance the flavors of the fish, making it a communal meal meant for sharing.

This home-style version captures the essence of Brazilian family cooking, using whole fish, olive oil, lemon, and herbs to create a simple yet flavorful dish. The fine sea salt and black pepper are adjusted to taste, allowing each cook to personalize the dish.

Ingredients

Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or debris. Pat them dry thoroughly with paper towels, ensuring the skin is dry to help it crisp during cooking. Make three diagonal slashes on each side of the fish to allow the flavors to penetrate.
  2. In a large, heavy-bottomed skillet or grill pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add a handful of your chosen fresh herbs, such as parsley or cilantro, and sauté for about 30 seconds until the herbs release their aroma. This step infuses the oil with flavor, creating a fragrant base for the fish.
  3. Season the fish generously with fine sea salt and black pepper, making sure to rub the seasoning into the slashes and inside the cavity. Carefully place the fish into the hot pan, laying them down away from you to avoid splattering. Cook for about 4-5 minutes on the first side, pressing gently with a spatula to ensure even contact with the pan.
  4. Flip the fish carefully using a spatula or tongs. Continue cooking on the second side for another 4-5 minutes. The fish is done when the flesh is opaque and flakes easily with a fork, and the skin is crisp and golden brown.
  5. Squeeze fresh lemon juice over the cooked fish, letting it mingle with the herbs and oil in the pan. Taste a small piece of the fish to check for seasoning, adding more salt if necessary. Serve immediately, garnished with additional fresh herbs if desired, and enjoy the dish family-style, as is traditional in Brazilian homes.
