Brasileiro Grilled Chicken Thighs 2

Brasileiro Grilled Chicken Thighs 2 is a dish deeply rooted in the rhythms of Brazilian home cooking, where intuition guides the hand in measuring salt and generous use of fat is a given. This recipe captures the essence of informal Brazilian family meals, where the focus is on simplicity and flavor rather than ceremony. It's a dish that finds its place on the table on any given day, an everyday favorite that brings family and friends together.

The taste is a harmonious blend of smoky paprika and the subtle tang of yogurt, creating a tender and juicy bite with each mouthful. The seasoning, adjusted to personal preference, allows the dish to resonate with the cook's unique touch. Without the need for elaborate accompaniments, these grilled chicken thighs shine on their own, embodying the unpretentious yet deeply satisfying nature of Brazilian home cooking.

Ingredients

  • 800 gchicken thighs
  • 2 tbspyogurt
  • 1 tbspoil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Start by patting the 800 g of chicken thighs dry with paper towels to remove excess moisture. This helps in achieving a good sear. Season the thighs generously with fine sea salt and black pepper to taste, ensuring both sides are well-coated. Sprinkle 1 tsp of paprika evenly over the chicken for a smoky flavor.
  2. In a large skillet or grill pan, heat 1 tbsp of oil over medium-high heat until it shimmers. Place the seasoned chicken thighs skin-side down in the pan. Cook without moving them until the skin is golden brown and crispy, about 5-7 minutes. Flip the thighs and brown the other side until it also develops a rich, golden color.
  3. Once both sides are browned, reduce the heat to medium. Add 2 tbsp of yogurt to the pan, stirring it gently to combine with the chicken drippings. This will create a creamy sauce base that will coat the chicken as it cooks.
  4. Allow the chicken to cook in the yogurt sauce, turning occasionally, until the meat is tender and cooked through. You’ll know it's done when the juices run clear when pierced with a fork, and the meat feels firm to the touch.
  5. If the sauce seems too thin, let it simmer for a few more minutes to reduce and thicken slightly. Taste the sauce and adjust the seasoning with more fine sea salt if needed, ensuring the flavors are balanced.
  6. Finish by sprinkling fresh herbs, such as chopped parsley or cilantro, over the chicken for a burst of freshness. Serve the Brasileiro Grilled Chicken Thighs immediately, allowing everyone at the table to enjoy the shared flavors of this Brazilian home-cooked dish.
