Method

  2. Heat 2 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Once the oil shimmers, place the lamb chops in the pan, being careful not to overcrowd them. Sear each side until they develop a deep, golden-brown crust, about 3-4 minutes per side. The crust should be rich in color, indicating the flavors are sealed in.
