Ingredients

  • 300 gbrown lentils
  • 1onion

Method

  1. Rinse the 300 g of brown lentils under cold water in a fine-mesh sieve until the water runs clear. Set them aside to drain. Dice 1 onion finely and chop 2 tomatoes into small pieces, keeping the juices. This will ensure even cooking and a flavorful base.
  2. In a large saucepan, heat 2 tbsp of oil over medium heat. Add the diced onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5 minutes. This slow cooking releases the onion's sweetness, forming the aromatic base of the dish.
  3. Stir in 1 tsp of cumin, letting it cook with the onions for about a minute until fragrant. This step blooms the spice, enhancing its earthy aroma and flavor.
  4. Add the chopped tomatoes along with their juices to the pan. Cook, stirring occasionally, until the tomatoes break down and meld with the onions, creating a thick, rich base. This should take about 5 to 7 minutes, and you'll notice the mixture turning a deeper color.
  5. Add the drained lentils to the pan, stirring to coat them in the tomato-onion mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer, then reduce the heat to low.
  6. Cover the pan and let the lentils cook, stirring occasionally, until they are tender but not mushy. This typically takes about 25 to 30 minutes, and you'll know they're done when they have a creamy texture and have absorbed most of the liquid.
  7. Remove the pan from the heat and season the lentils with fine sea salt and black pepper to taste. Stir well and taste again, adjusting the seasoning if necessary. The lentils should be well-seasoned, with the salt enhancing the natural flavors of the ingredients.
