Brasileiro Squid Stir-Fry 2

Brasileiro Squid Stir-Fry 2 is a staple at Brazilian home tables, capturing the essence of casual family meals where recipes are shared through generations rather than written down. This dish embodies the spontaneity of Brazilian cooking, where salt is judged by intuition, and oil flows generously. It’s the kind of dish that appears effortlessly on weeknight tables, ready to bring people together.

The stir-fry delivers a vibrant punch, with tender squid rings mingling with the aromatic embrace of garlic and the bright acidity of fresh lemon juice. A hint of chili adds warmth, balanced by the subtle salinity of fine sea salt. This dish is best shared, encouraging conversation and laughter around the table.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned and patted dry with paper towels. This step is crucial to remove any excess moisture, which helps in achieving a good sear when cooking.
  2. In a large, heavy-bottomed skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add 4 cloves of garlic, finely minced. Stir the garlic constantly for about 30 seconds until it becomes fragrant and just begins to turn golden, releasing its aroma into the oil.
  3. Add the squid rings to the skillet in a single layer, ensuring they have enough room to cook evenly. Sprinkle with chili to taste, adjusting the amount based on your heat preference. Stir the squid continuously for about 2 to 3 minutes, or until the rings turn opaque and firm to the touch. This quick cooking ensures the squid remains tender.
  4. Remove the skillet from heat and immediately squeeze the juice of one lemon over the squid, tossing to coat evenly. This adds a bright, fresh flavor that complements the richness of the squid.
  5. Taste the squid and sprinkle with fine sea salt to your preference, keeping in mind that a light touch enhances the natural flavors without overpowering them. Serve the stir-fry immediately while it's hot, making sure everyone at the table can enjoy this fresh and flavorful dish.
