Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater

Method

  1. Begin by seasoning the 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. Use your hands to ensure the seasoning coats each piece evenly, enhancing the beef's natural flavors and preparing it for browning.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the meat on all sides until it develops a deep, rich color, which should take about 5-7 minutes per batch. This step is crucial for developing the dish's flavor, so take the time to achieve a good sear.
  3. While the beef is browning, peel and slice 2 carrots into rounds and chop 1 onion into medium-sized pieces. Once the beef is browned, remove it from the pot and set aside. Add the chopped onion to the same pot, using the residual oil and beef drippings to sauté until the onion becomes translucent and fragrant, about 3-4 minutes.
  4. Add the sliced carrots to the pot with the onions and stir well. Cook for another 2-3 minutes, allowing the carrots to start softening and absorbing the flavors from the pot.
  5. Return the browned beef cubes to the pot, along with any juices that have accumulated. Pour in 500 ml of water, stirring to combine all ingredients. Bring the mixture to a gentle simmer, ensuring the beef is just covered with liquid. Cover the pot with a lid, reduce the heat to low, and allow it to braise slowly.
  6. Let the beef simmer gently, stirring occasionally, until it becomes tender and the flavors meld together. This should take about 1.5 to 2 hours. The beef is done when it is fork-tender and the sauce has thickened slightly, coating the back of a spoon.
  7. Taste the dish and adjust the seasoning with more fine sea salt and black pepper if needed. Serve the Caribbean Beef Pot 2 hot, accompanied by rice, bread, or a fresh salad for a complete meal.
