Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater

Method

  1. Season the 800 g beef cubes with fine sea salt and black pepper to taste. Make sure each piece is evenly coated. This step ensures that the meat is flavorful throughout the cooking process.
  2. Heat 2 tbsp of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, being careful not to overcrowd the pot. Brown the meat on all sides until it develops a deep, rich color, which should take about 3-5 minutes per side. This browning adds depth and complexity to the dish.
  3. While the beef is browning, peel and slice 2 carrots into rounds and chop 1 onion into medium-sized pieces. These vegetables will add sweetness and aroma to the pot.
  4. Once the beef is browned, remove it from the pot and set aside. In the same pot, add the chopped onion and carrot slices. Stir them in the remaining oil and beef drippings, cooking until the onion becomes translucent and the carrots start to soften. This should take about 5 minutes and will help build the flavor base for the dish.
  5. Return the browned beef cubes to the pot with the vegetables. Pour in 500 ml of water, ensuring the beef and vegetables are mostly submerged. Bring the mixture to a gentle simmer over medium heat. Cover the pot with a lid, leaving a small gap for steam to escape, and let it braise.
  6. Cook the beef and vegetables until the beef is tender, which should take about 1.5 to 2 hours. Stir occasionally and check the liquid level, adding more water if necessary to keep the beef partially submerged. The beef is done when it can be easily pierced with a fork and the sauce has thickened slightly.
