Caribbean Beef Pot is a staple of home cooking in the Caribbean, where the approach is all about intuition and abundance. Ingredients

  • 800 gbeef cubes
  • 2carrots

  • 2 tbspoil
  • 500 mlwater

Method

  1. Begin by seasoning the 800 g of beef cubes with fine sea salt and black pepper to taste. Make sure each piece is evenly coated. This step ensures the meat is flavorful throughout and helps to tenderize it slightly before cooking.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in batches, ensuring not to overcrowd the pot. Brown the meat on all sides until each piece has developed a deep, rich color. This caramelization adds depth to the dish's flavor.
  3. While the beef is browning, peel and slice 2 carrots into rounds and chop 1 onion into medium-sized pieces. These vegetables will add sweetness and complexity to the dish.
  4. Once all the beef is browned, remove it from the pot and set aside. In the same pot, add the chopped onion and carrot slices. Sauté them in the residual oil and beef drippings over medium heat until the onions become translucent and the carrots start to soften. This step builds the base flavors of the dish.
  5. Return the browned beef cubes to the pot with the vegetables. Pour in 500 ml of water, ensuring the liquid covers the ingredients. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and allow it to braise slowly. The beef is done when it is tender and easily pierced with a fork, and the liquid has thickened slightly.
  6. Taste the dish and adjust the seasoning with more salt and black pepper if needed. The flavors should be balanced, with the beef tender and the vegetables soft.
