Ingredients

Method

  1. Begin by placing 800 g of beef cubes in a large mixing bowl. Add 1 tsp of cumin, a generous pinch of fine sea salt, and freshly ground black pepper to taste. Toss the beef cubes thoroughly to ensure each piece is evenly coated with the seasoning. This step infuses the meat with flavor, setting the foundation for the dish.
  2. Peel and finely chop 1 onion. In a large skillet or frying pan, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the chopped onion and sauté until it becomes translucent and fragrant, about 3-4 minutes. This will add a sweet and savory base to the beef.
  3. Increase the heat to high and add the seasoned beef cubes to the pan. Spread them out in a single layer to ensure even browning. Allow the beef to sear without stirring for about 2-3 minutes, then turn the pieces to brown on all sides. Look for a deep, rich color on the surface of the beef, which indicates a good sear and enhanced flavor.
  4. Once the beef is browned, you have two options: either transfer the beef cubes to skewers for grilling or keep them in the pan for braising. If grilling, preheat your grill to medium-high and cook the skewers, turning occasionally, until the beef is tender and cooked to your liking. If braising, reduce the heat to low, cover the pan, and let the beef simmer gently until tender, stirring occasionally.
  5. As the beef approaches doneness, taste a piece to check for seasoning. Adjust the salt and pepper if necessary. The beef should be tender and juicy, with a slight char from the grill or a rich, savory depth from the braise.
