Caribbean Chicken Roast 2

Caribbean Chicken Roast 2 is a cherished staple that graces home tables across the islands, particularly during family gatherings or weekend feasts. Ingredients

Method

  1. Begin by preheating your oven to 375°F (190°C). Pat the whole chicken dry with paper towels to ensure a crispy skin. Rub the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, making sure to cover all sides and inside the cavity. This seasoning will infuse the chicken with flavor as it cooks.
  2. In a large ovenproof skillet or roasting pan, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breast-side down in the pan. Brown the chicken for about 5 minutes on each side until the skin is golden and crisp. This step locks in the juices and enhances the flavor.
  3. While the chicken is browning, peel and cut the 1 kg of potatoes into large chunks. Once the chicken is browned, remove it from the pan and set it aside. Add the potato chunks to the same pan, tossing them in the rendered chicken fat and any remaining oil. Season the potatoes with a pinch of salt and black pepper.
  4. Nestle the browned chicken back into the pan on top of the potatoes. Squeeze the juice from the halved lemon over the chicken and potatoes, then place the lemon halves into the pan for added aroma. Transfer the pan to the preheated oven.
  5. Roast the chicken and potatoes in the oven, basting occasionally with the pan juices. Cook until the chicken's juices run clear when pierced at the thickest part of the thigh, and the potatoes are tender and golden brown. This should take about 45 minutes to an hour, depending on your oven.
  6. Once cooked, remove the pan from the oven. If there's excess liquid, place the pan on the stovetop over medium heat and reduce the sauce until it thickens slightly, enhancing its flavor. Taste the sauce and adjust the seasoning with more salt if needed.
  7. Finish by garnishing the chicken with freshly chopped herbs of your choice, such as parsley or cilantro, to add a burst of freshness. Serve the Caribbean Chicken Roast 2 family-style, directly from the pan, ensuring everyone gets a share of the succulent chicken and crispy potatoes.
