Caribbean Chicken Roast

Caribbean Chicken Roast is a staple at family tables across the islands. This dish captures the essence of home cooking, where ingredients are measured by feel and instinct rather than precision. Ingredients

  • 1whole chicken
  • 1 kgpotatoes
  • 2 tbspoil
  • 1 tsppaprika
  • lemonhalved
  • to tastefine sea salt and black pepper

Method

  1. Preheat your oven to 375°F (190°C). Begin by patting the whole chicken dry with paper towels to ensure a crispy skin. Rub the chicken generously with fine sea salt, black pepper, and 1 tsp paprika, making sure to get into all the crevices for maximum flavor. Heat 2 tbsp oil in a large, oven-safe skillet over medium-high heat. Once the oil shimmers, place the chicken breast-side down and brown it for about 5 minutes until the skin is golden and crisp.
  2. While the chicken is browning, wash and cut 1 kg of potatoes into even-sized chunks, about 1-inch pieces, to ensure they cook evenly. Once the chicken is browned, carefully flip it over using tongs. Add the potato chunks around the chicken in the skillet, ensuring they are coated with the oil and chicken drippings.
  3. Squeeze the juice from the halved lemon over the chicken and potatoes, then place the lemon halves in the skillet for added aroma. Transfer the skillet to the preheated oven. Roast the chicken for about 45 minutes, basting occasionally with the pan juices, until the chicken is cooked through and the potatoes are tender when pierced with a fork.
  4. Once the chicken is done, remove it from the skillet and let it rest on a cutting board for about 10 minutes to allow the juices to redistribute. Meanwhile, if the sauce in the skillet is too thin, place the skillet back on the stove over medium heat and let it simmer until it thickens slightly. Taste the sauce and adjust the seasoning with more salt and pepper if needed.
  5. Carve the chicken into serving pieces and arrange them on a platter with the roasted potatoes. Finish with a sprinkle of fresh herbs, if desired, to add a burst of color and freshness. Serve the Caribbean Chicken Roast family-style, allowing everyone to help themselves to the juicy chicken and flavorful potatoes.
