Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by dicing the onion and tomatoes into small, even pieces. This ensures they cook evenly and blend well into the curry. Rinse the 400 g of chickpeas under cold water and drain them thoroughly. Set these ingredients aside, ready to be added to the pan.
  2. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Once the oil is shimmering, add the diced onion. Stir occasionally, cooking the onion until it becomes translucent and soft, releasing its sweet aroma.
  3. Add 1 teaspoon of cumin to the softened onions, stirring continuously for about a minute. This allows the cumin to toast slightly, releasing its warm, earthy fragrance into the oil and onions.
  4. Introduce the diced tomatoes into the pot, stirring to combine them with the onion and cumin mixture. Cook until the tomatoes break down and form a thick, rich base, which should take on a deep red hue.
  5. Add the drained chickpeas to the pot, stirring them into the tomato-onion mixture. Ensure the chickpeas are well-coated with the spices and base. Allow them to simmer gently, absorbing the flavors and softening slightly.
  6. Taste the curry and season with fine sea salt and black pepper to your liking. Stir well to ensure the seasoning is evenly distributed throughout the dish.
  7. Once the chickpeas are tender and the curry has a thick, cohesive texture, it's ready to serve. The dish should have a rich, aromatic scent and a vibrant color, characteristic of a well-cooked Caribbean Chickpea Curry.
