Ingredients

  • 2eggplants
  • 2tomatoes
  • 1onion
  • 80 mlolive oil
  • 3 clovesgarlic

Method

  1. Start by washing the 2 eggplants and 2 tomatoes thoroughly under running water. Dice the eggplants into 1-inch cubes and set them aside. Cut the tomatoes into small chunks, ensuring you capture any juices, and set them aside as well. Peel and finely chop the onion and 3 cloves of garlic, keeping them separate.
  2. In a large, heavy-bottomed pot, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. Add the garlic and continue to cook until it releases its aroma, being careful not to let it brown.
  3. Add the diced eggplant to the pot, stirring to coat the pieces in the fragrant oil and onion mixture. Cook for about 10 minutes, stirring occasionally, until the eggplant begins to soften and takes on a golden hue. This step allows the eggplant to absorb the flavors and become tender.
  4. Stir in the chopped tomatoes along with their juices. Mix everything well and let the stew simmer gently. The tomatoes will break down and create a rich, flavorful sauce. Continue cooking until the eggplant is fully tender and the tomatoes have melded into the sauce, creating a cohesive stew with a thick, hearty texture.
  5. Season the stew to taste with fine sea salt and black pepper. Stir well to ensure the seasoning is evenly distributed. Taste and adjust as needed, keeping in mind the balance of flavors. Once satisfied with the seasoning, remove the pot from the heat and let it sit for a few minutes before serving.
