Caribbean Fish Curry 2 is a beloved staple at home tables across the islands, reflecting a deeply ingrained tradition of communal dining. Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Start by cleaning the 700 g of firm white fish under cold running water to remove any scales or impurities. Pat the fish dry with paper towels to ensure it sears properly and doesn't steam in the pan.
  2. Dice 1 onion and 2 tomatoes into small, even pieces. This will ensure they cook evenly and release their flavors into the curry.
  3. In a large, heavy-bottomed pan, heat 80 ml of oil over medium heat. Once the oil shimmers, add the diced onion. Stir occasionally until the onion becomes translucent and soft, releasing its sweet aroma.
  4. Add the diced tomatoes to the pan with the onions. Cook until the tomatoes break down and meld with the onions, creating a thick, fragrant base. Stir in 1 tsp of turmeric, allowing it to bloom in the oil, which will enhance its earthy flavor and vibrant color.
  5. Season the fish with fine sea salt and black pepper to taste. Gently place the fish into the pan, nestling it into the aromatic base. Cook the fish only until it turns opaque and flakes easily with a fork, ensuring it remains tender and moist.
  6. Taste the curry for seasoning, adjusting the salt if necessary. Serve immediately, allowing the flavors to be enjoyed at their peak, with the table set for sharing.
