Caribbean Fish Curry is a beloved dish that finds its place in the heart of many family meals across the islands. Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Begin by cleaning the 700 g of firm white fish. Rinse it under cold water to remove any scales or impurities, then pat dry with paper towels. This ensures the fish will sear properly without steaming.
  2. Dice 1 onion and 2 tomatoes into small, even pieces. This will help them cook evenly and blend into the curry base, creating a rich and flavorful sauce.
  3. In a large, heavy-bottomed pan, heat 80 ml of oil over medium heat. Once the oil is shimmering, add the diced onion. Cook, stirring occasionally, until the onion becomes translucent and fragrant, which should take about 3-4 minutes.
  4. Add the diced tomatoes to the pan along with 1 tsp of turmeric. Stir well to combine, allowing the tomatoes to soften and release their juices. This will create a vibrant, aromatic base for the curry.
  5. Season the mixture with fine sea salt and black pepper to taste. Stir and let it cook for another 2 minutes until the spices are well incorporated and the mixture is thickened slightly.
  6. Gently place the fish pieces into the pan, nestling them into the sauce. Cover the pan and let the fish cook until just opaque, which means the fish should be firm to the touch and easily flake with a fork, usually around 5-7 minutes depending on the thickness.
  7. Once the fish is cooked, taste the curry and adjust the salt if necessary. Serve immediately, ensuring each portion has a generous amount of sauce. This dish is best enjoyed fresh, with the flavors at their peak.
